Ingredients:
2 eggs
2 ripe banana
1 cup almond flour
1/2 cup cassava flour
2 tbsp coconut flour
3 tbsp collagen powder
1/4 cup coconut oil
1 tbsp ghee
1/4 cup milk
2 tbsp coconut sugar
1 tsp baking powder
Pinch salt
Good quality dark choc, cut into small pieces
Method:
1. Preheat oven to 180 degrees
2. In a large mixing bowl, mash bananas with a fork
3. Add all ingredients to bowl (besides the chocolate) and stir until combined
4. Add in the chocolate pieces and mix through
5. In a lined cake tin, pour mixture in, and add more chocolate pieces to the top
6. Bake for 30 minutes, until golden on top
7. Allow to cool and enjoy with some high quality double thick cream!
