Recipe: Rosemary & Mint Lamb Shanks

 

Ingredients:

  • 4-6 lamb shanks
  • 2 tbsp bone broth powder
  • 2 garlic cloves, diced finely
  • 1/2 onion, diced finely
  • 1 tbsp ghee
  • 1/4 cup coconut aminos
  • 1/2 cup fresh mint, diced finely
  • 3 stalks of fresh rosemary
  • 2 tbsp thyme 
  • salt & pepper
  • Filtered water to top

Method:

1. In a pan, fry off the onion and garlic in ghee or olive oil until lightly golden, then set aside. Add the lamb shanks to a pan, sprinkle them with a good amount of salt and fry them off until lightly golden on each side. This will take a few minutes.

2. Transfer the lamb shanks, garlic, onion and remainder of ingredients into a large pot for stovetop option, or a slow cooker. Add filtered water and give it a good stir. You want enough liquid in the pot where the shanks are mostly covered.

3. Cook on low for 6-8 hours (depending on what you use). Turn the shanks over at some point during the cooking process if you can.

Serve with mashed potato and don't forget to pour all the wonderful juices on top!
