With a very subtle sweetness, and the texture of shortbread (thanks to all that beautiful butter), these are GF, gut friendly, and the perfect little snack during pregnancy.
Ingredients:
1 1/4 cup cassava flour
1/3 cup collagen
1/2 cup grass fed butter, room temperature
1 egg
1/3 cup dark choc chips
4 tbsp coconut sugar
1 tsp vanilla
1/2 tsp baking soda
Method:
Preheat oven to 180 degrees.
Using your hands, combine all ingredients until dough forms.
Roll into balls and flatten slightly with a fork.
Place in oven to bake for 12 mins until lightly golden.
These are enjoyed warm, but texture is better once cooled.
