Nourish your body and soul with this Moroccan Chicken dish — a perfect blend of wholesome ingredients like chicken bone broth, ghee, herbs and spices, honey and apricots!

Ingredients
1kg chicken thigh cut into pieces
good splash of coconut aminos
1 garlic clove, diced
1 tsp curry powder
1/4 tsp ground ginger
1 tsp oregano
1 tsp salt
1 tsp thyme
2 tablespoons honey
Lemon juice
Lemon rind
50g butter
2 tbsp ghee
2 cups chicken or beef bone broth
8 dried apricot, cut into small pieces
Method
In a pot, melt butter and add garlic. Cook for a few minutes then add remainder of ingredients, except chicken.
Allow to simmer for about 5 minutes, stirring regularly. Add chicken, give it a good stir and cover with a lid. Cook on low heat for about 1.5-2 hours.
Serve with Jasmine rice and a dollop of Greek yoghurt.
