Ingredients

4 chicken breast fillets

Olive oil

Salt & pepper

1/2 cup tomato paste

dried herbs (oregano, basil, or Italian herb mix)

Sliced ham (nitrate-free if possible)

Goat cheese, soft or hard
Method

Preheat your BBQ or Webber.

Season the chicken fillets with salt, pepper, and a drizzle of olive oil.

Grill the chicken for about 5 minutes each side until lightly golden and just undercooked in the centre.

In a small bowl, mix the tomato paste with a splash of olive oil, salt, and herbs to create your sauce.

Transfer the chicken to a baking tray. Spread each fillet with the tomato paste mixture.

Top with ham slices, then add goat cheese on top.

Bake in a preheated oven at 180°C (fan-forced) for around 20 minutes, or until the chicken is cooked through and the cheese is melted and ham in starting to crisp slightly.

Serve with rice and salad, or mashed potato and your favourite vege!
