Crispy Coconut Chicken Tenders
Ingredients
600g-1kg chicken tenders
Good splash of coconut aminos
1/2 tsp garlic powder
1/ tsp smoked paprika
salt
1 tbsp olive oil
shredded coconut
coconut oil for cooking
Method
Place chicken tenders in a bowl, then add coconut aminos, garlic powder, smoked paprika, salt and olive oil. Use your hands to mix it all together.
Sprinkle a generous amount of shredded coconut onto a plate, then one by one, coat the chicken tenders.
Add some coconut oil to a hot pan, and cook the tenders until golden brown each side. Tenders cook quite easy so the trick is to cook them just the right amount so the coconut doesn't completely burn.
If your pan is piling up with coconut, it's best to remove it from the pan before placing more chicken on so that it doesn't continue to cook and burn.
Serve with cold pasta salad, or a herbed rice, or even wraps!
