Ingredients for Chicken Patties:
- 1 kg chicken mince
- 2 eggs
- 1 tsp ground coriander
- 1 tsp ground cumin
- 2 tbsp mixed herbs
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp tapioca powder
Optional add in: 5-6 Spleen & Liver Capsules, opened up and sprinkled in
Ingredients for Spiced Coconut Rice:
- 1 tbsp coconut oil
- 1 cup basmati rice (soaked and drained)
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/4 tsp ground cinnamon
- 1 tbsp bone broth concentrate (Best of The Bone)
- 1/2 tsp salt
- water
Method for Chicken Patties:
1. Prepare the Patty Mixture
- Preheat the oven to 180 degrees
- In a large mixing bowl, combine the chicken mince, eggs, coriander, cumin, mixed herbs, salt, pepper, and tapioca powder.
- Mix well until all the ingredients are evenly incorporated.
2. Shape the Patties
- Scoop out portions of the mixture and shape them into evenly sized patties. (these are a bit sticky, so coating your hands in some tapioca will help).
3. Pan Sear the Patties
- Heat a non-stick pan over medium heat and lightly coat with oil.
- Sear the patties on both sides until golden brown (about 2 minutes per side).
4. Finish in the Oven
- Place the seared patties on a baking tray lined with baking paper.
- Bake for 15–20 minutes, or until the patties are fully cooked through.
Method for Coconut Spiced Rice:
1. Prepare the Rice Base
- Heat a medium sized pan over low-medium heat and add the coconut oil.
- Once melted, add the coriander, cumin, and cinnamon. Stir gently for about 30 seconds until fragrant.
2. Coat the Rice in Spices
- Add the soaked and drained basmati rice to the pan.
- Stir to coat the rice evenly with the spices and oil.
3. Cook the Rice
- Pour water into the pan, covering the rice by about 3 cm.
- Add the bone broth and salt and give it a gentle stir.
- Bring the liquid to a gentle simmer, then reduce the heat to low and cover the pan with a lid.
4. Simmer and Stir
- Allow the rice to cook undisturbed for about 10 minutes. Halfway through, stir the rice once to ensure even cooking/ non sticking.
- Once the liquid is fully absorbed, turn off the heat.
5. Steam and Soften
- Stir the rice gently one more time, then place the lid back on the pan.
- Let the rice sit for about 10 minutes to soften further and develop its texture.
Serve patties and rice with some fresh salad on the side and a dollop of Greek yoghurt.
