Recipe: Buckwheat Collagen Choc Chip Cookies

These cookies are GF, DF & EGG FREE, making them a great option for any breastfeeding mamas who are experiencing food sensitivities in their baby.
Chewy but crispy and full of collagen protein, they are a dream! 🤎



Ingredients:
1 cup buckwheat flour
1/4 cup Maia collagen powder
2/4 cup rapadura sugar (you could also use coconut sugar)
1/4 cup desiccated coconut 
3/4 cup coconut oil, melted
2 tbsp water
1 tsp apple cider vinegar
1 tsp baking soda
1.5 tsp cinnamon
1/2 tsp vanilla bean powder
pinch salt
choc chips

Method:
Mix all dry ingredients together (besides the choc chips), then pour in the melted coconut oil, water and ACV, and mix well. Mixture should be moist (not super wet), where it will stick together if you squeezed it in your hand. If mixture is too dry, add a bit more coconut oil. Add in choc chips then roll into balls, size of your liking. Press down slightly with a fork and place in oven for 15 mins on 180 degrees.
